My main target is Micci, who snacks on miniature candy bars, and exhibits a strange fascination with the Field Roast sandwich I eat every day. No matter how often I tell her that vegan grain meat is nothing to be afraid of, she&#8217;s having none of it.<\/p>\n<p \/>The day I caught her heating an Amy&#8217;s Tofu Lasagne in the microwave, though, I knew I had an in. Turns out she really likes tofu, so I told her about using silken tofu in baked goods. She said that if I brought some in, she would give them a try. So that&#8217;s what I did today.<\/p>\n<p \/><a name=1><\/a>I brought <a href=http:\/\/www.morinu.com\/recipes\/categories\/index.cfm?fuseaction=dsp_recipe&#038;ID=642&#038;CourseID=4&#038;RequestTimeout=500 target=rec>tofu brownies<\/a> and my own creation, protein cookies<span class=small><sup><a href=#n1>1<\/a><\/sup><\/span>. As far as brownies and cookies go, they&#8217;re really healthy. The brownies are sugar-free (as long as you make them with Splenda), low-fat, vegan, and chock-full-o-protein. The brownies are all that <i>and<\/i> low-carb.<\/p>\n<p \/>So you&#8217;d think my coworkers would&#8217;ve been excited, right? Apart from Micci, I have never seen a group of people so terrified of food in my life. You&#8217;d think I was offering them a Tupperware container full of worms. I noticed that men in particular seem to have a physical aversion to the word &#8216;tofu&#8217;, they flinch when I say it. Gary and Steve wouldn&#8217;t touch them at all. Everyone else tried them and all seemed to like them a lot. Micci ate two brownies and one cookie, then wanted the recipes. So I think this is a good sign. I understand that these things take time, and I am persistent as hell.<\/p>\n<p \/>Jenni<\/p>\n<p \/>\n<div class=small><a name=n1><\/a><sup><a href=#1>1<\/a><\/sup> MY PROTEIN COOKIES.<br \/>No, really, they&#8217;re good!<\/p>\n<p>2 medium bananas or 1 plantain (black)<br \/>3\/4 c quick-cooking oatmeal<br \/>1 scoop protein powder*<br \/>1\/2 c Splenda**<br \/>1\/4 c raisins<br \/>1\/2 t baking powder<br \/>1\/2 t lemon juice<br \/>1 t cinnamon<br \/>1\/4 t nutmeg<br \/>1\/4 t cloves<\/p>\n<p>I improvise a ton with this recipe and it&#8217;s forgiving. The best I&#8217;ve come up with is:<\/p>\n<p \/>Blend up the bananas in the food processor (or mash them with a fork). Mix in the rest of the ingredients and form into balls. Bake on a greased cookie sheet at 350 degrees for 12 minutes. Makes about 12-15 cookies, depending on how many bananas you use. If the dough is too wet, add more oatmeal. Each cookie has around 50 calories and 2g of protein. <\/p>\n<p \/>*Um, I think that&#8217;s 1\/4 cup? I use Whole Foods&#8217; protein powder. 25g a scoop.<br \/>**In the box, not packets.
